St. Patrick's Day Snacks | mini whoopie pies

Tis the season to watch one of our favorite DCOMs — The Luck of the Irish — and I've got you covered on movie night snacks! Last year, I posted two different St. Patrick's Day snacks featuring some of our favorite cereals and, this year, I'm sharing festive mini whoopie pies that you can make and share with all of your friends.

St. Patrick's Day Mini Whoopie Pies


1 roll of sugar cookie dough 
1/2 cup + 1 tbsp of all-purpose flour 
25 drops of green food coloring 
2 eggs 

1 stick of butter 
2 and 1/2 cups of powdered sugar 
1 tbsp of milk 
1 tsp of vanilla 
A dash of salt 

Preheat oven to 350°F. Line cookie sheet with parchment paper.

In a large bowl, break the cookie dough up into small pieces. Add the eggs, flour, and drops of green food coloring into the bowl with the cookie dough pieces. Mix with electric hand mixer until thoroughly blended.

Add the blended dough into a piping bag and pipe silver dollar size circles of dough onto the parchment paper. Bake for 8 minutes, then remove from oven and let cool.

While cookies cool, make frosting by combining butter, powdered sugar, milk, vanilla, and salt in bowl and mix.

If you aren't happy with the shape of your cookies when they cool, you can use a circle cookie cutter to make them perfectly round. When your cookies are ready, place your frosting in a piping bag and add a thick layer onto the bottom of one cookie. Place the bottom of another cookie on top of the frosting to form a mini whoopie pie. Repeat for all of your cookies.

When your frosting has set, you can package your mini whoopie pies to share in small plastic bags, sealed and tied with a little ribbon.
